Planting a garden this year? How about adding some rhubard, which can be harvested from about April to September in Canada and the United States. Rhubarb is a great source of calcium which is one of the minerals needed for bone health. In addition, it is a good source of Lutein, a compound which is beneficial for your skin and eyes. Here are some suggestions to incorporate rhubarb into your dietary routine.
1Stir together all ingredients in a large saucepan (off heat); let stand until rhubarb releases some liquid, about 10 minutes.
2Bring mixture to a boil over medium-high heat, stirring occasionally. Reduce heat; simmer, stirring occasionally, until rhubarb has broken down
3Cool and add rhubard to a parfait glass or bowl and top with a dollop of Greek Yogurt.
Note: Add on top of your stack of pancakes for a nutritional punch.
