Looking for a new healthy Halloween cookie recipe that is gluten free and blood sugar-friendly, and will be a hit with your children. You have to try our witches fingers, they are similar to the traditional shortbread with a few healthier modications, along a hint of almond flavor. Serve up a bowl of fingers at your Halloween party!
1Preheat oven to 325 degrees
2Blend coconut sugar and arrowroot in a high speed blender to the consistency of icing sugar. Add to a mixing bowl.
3Add the flour, baking powder, and spirulina powder, then mix in the butter, egg and almond flavor.
4Form into a ball and refrigerate for at 30 minutes. Work with ¼ of the dough at a time.
5Using your hands roll a ½ inch ball then form into the shape of a finger and place on a parchment paper lined baking sheet. They should be about half the size of a regular finger seeing they will expand during the baking process.
6Insert the a sliced almond into the tip of the finger and use a knife to press lines in the middle for the knuckles.
7Bake for about 10 to 15 minutes.
NOTE: Product brands that we used in this recipe: Bob's Red Mill (arrowroot, GF all purpose flour, baking powder), Frontier Natural Products Co-op (almond flavor), Natural Traditions (spirulina for hint of green color)
