Here is the perfect recipe with more nutrients than lean ground beef–lean Bison meat is a healthy source of protein, with less total fat, saturated fat, and cholesterol. It contains higher levels of Omega-3 fatty acids which are important in fighting chronic inflammation.
2 lbs organic free range ground bison
2 tbs extra virgin coconut oil
1 large yellow onion, minced
4 shallots, minced
6 garlic cloves, minced
3 inch piece of garlic, minced
¼ cup coconut aminos
1 ½ cups fresh basil, chiffinada
1 tbs celtic sea salt
1 lemon, juiced
1Preheat oven to 350 F
2Heat a large cast iron skillet and add coconut oil, onions and shallots. Saute until translucent, about 10 min. Add ginger, garlic and coconut aminos. Stir to combine. Fold in Basil and transfer to a bowl to cool.
3In a large bowl, generously salt bison and add onion mixture and mix to combine. Season with lemon juice.
4Line a baking tray with parchment paper.
5Form bison into small balls and place on parchment paper. Bake for 17-20 min or until bison is cooked through but not over done.
6Cool bison meatballs and place on serving try with a toothpick or bamboo skewer.
