Here is a delicious protein-rich breakfast that is perfect after a workout to help replenishes essential nutrients and build lean muscle. Notably, it also has anti-inflammatory, blood sugar balancing, and thermogenic ingredients for those looking for a healthy weight management breakfast.

Ingredients

3 eggs

2 Tbsp pumpkin puree

1/2 cup reduced-fat yogurt

1/2 cup whole oats

1/4 cup oat flour

1 tsp baking powder

1/4 cup vanilla whey protein powder or plant-based protein

1 tsp vanilla

1 tsp cinnamon

1/2 tsp ginger

1/4 tsp cloves

1 tbsp coconut oil (for frying)

Rooibos Pear Topping

2 pears, cored and chopped

1 rooibos tea bags

1/2 cup hot water

1/2 tsp cinnamon

Directions

1Mix together the eggs, pumpkin, yogurt, and vanilla.

2Stir in the oat flour, protein powder, baking powder, cinnamon, ginger, and cloves. Then mix in the whole oats.

3Add the coconut oil to a hot griddle and pour the batter into small rounds. Cook on each side until browned.

4Serve with the rooibos pear topping.

Rooibos Pear Topping

1Steep the tea and water in a saucepan

2Remove the tea bag, add the pears and cinnamon to the tea

3Heat until warm and thick.

Tip: Chai rooibos tea works really well in this recipe, and the addition of traditional indian spices such as cinnamon, cardamon, and cloves gives a real warm and soothing effect.
