Farro Salad with Heirloom Tomato Vinaigrette

Ancient grains are great for satiating appetite thus reducing the chance of blood sugar spikes, which can lead to potential weight loss for some individuals.

They are also high in fibre which may lead to a healthier digestive tract by being more regular.

  • Yields: 6 Servings

Ingredients

2½ cups of farro soaked 4 to 6 hours (add enough water just to cover) or soft spelt berries

2 tbsp of olive oil

1 medium carrot small diced

1 package white shimeji mushrooms

2 cups of button mushrooms quartered

2 stalks celery diced

1 small onion diced

2 cloves of garlic minced

1 liter of water or low sodium chicken broth

1 bay leaf

3 sprigs of fresh thyme

3 tbsp of heirloom tomato vinaigrette (recipe follows)

Sea salt and pepper to taste

Heirloom Tomato Vinaigrette

1 medium heirloom tomato diced

1 cup olive oil

¼ cup of red wine vinegar

2 tbsp of raw honey

2 tbsp of fresh parsley

3 tbsp of fresh basil

1 clove of garlic minced

2 tbsp of shallot diced

Sea salt and black pepper to taste

Directions

1In a medium to large stainless steel sauce pan over medium-heat begin heating the olive oil.

2Add to the pan the onion, carrot, celery, the mushrooms, and then the garlic.

3Cook all ingredients until soft and season with salt and pepper.

4Drain off the water from the spelt berries or faro, and discard the water.

5Add to the pan the farro or spelt berries, bay leaves, thyme and liquid and bring to boil.

6Turn to a simmer and cover, cook for about 20 to 30 minutes or until all the water is absorbed and the farro or spelt berries are soft.

7Season with salt and pepper.

Heirloom Tomato Vinaigrette

1In a stainless steel bowl add the diced tomato, red wine vinegar, honey, fresh herbs, garlic, shallots, olive oil and mix well season with salt and pepper.

2To serve the dish put 2 cups of the cooked warm grain mixture into a stainless steel bowl and toss with 2 tbsp of the tomato vinaigrette and serve immediately.

Flavor and Preparation Tips:

Something that goes well with this dish is 2 tbsp of crumbled goat’s cheese, or few pieces of shaved asiago cheese or grated parmesan cheese. Just add either of the cheeses as a garnish when you serve the dish. You can also add 1 cup of mixed greens to the bottom of your bowl before serving the warm grain mixture into the bowl.
