Vegan Black Bean and Millet Stuffed Peppers

I discovered a traditional Mexican dish while living abroad in the Yucatan called Chilies En Nogada. It is typically served during the month of September in honor of Mexican Independence Day because the colors of the food in the dish mirror those in the Mexican flag: red, white & green. It is also popular over the Christmas holiday. Back home I created a vegan version packed with nutrients and healthy enough to be eaten every day and not just on special occasions. This rendition is high in protein, blood sugar balancing and makes use of millet, an often overlooked whole grain.

I originally created this recipe as a results-driven detox/cleanse program. Our clients needed something to sustain them through a morning of exercise that was satisfying and energizing, and these protein-packed bars fit the bill. They are perfect now with summer winding down and kids going back to school. Nourishing, portable and easy to make, this raw granola bar recipe provides a great template for experimenting with additional flavor combinations. For breakfast balance the granola bars out with a green juice or smoothie. Keep one on hand for a mid-morning snack or a lunch box option.
